Chocolate chip pancakes for breakfast...What was I thinking?

This morning started off with being woken up at 7.30am, nope not by my daughter (2) which is what you would expect, but yes by my son (7) who should know better. Feeling guilty as I quite often do due to the lack of attention he gets because his sister (the demanding 2 year old a.k.a the boss / devil child) normally takes the priority, as he asked so nicely I let him have a snuggle with me in bed while we both watched some craft videos to get ideas for things to do in the half term and Halloween.

Can’t wait to share with you all what we have planned.

Eventually my daughter got to the point she wanted to get up and before I realised what I was saying I stupidly said to the kids ‘shall we have pancakes for breakfast!!’ As soon as those words came out my mouth I thought why? Why would I put myself through that! I felt like a zombie mum with a week they had decided to both cut my sleep back.

It didn’t actually end up being that bad I tried to not be such a control freak and let my son put all the ingredients in (measurements and all) and mix it up ready to cook, whilst ignoring the mess that was being made. We used a chocolate chip pancake recipe which we found online...link is below as they were lush, a little sickly as we put in extra chocolate chips, but they were amazeballs.

I don’t recommend putting in extra choc chips especially as I didn’t think about the fact that the kids would be bouncing off the walls especially after wanting more sugary toppings on top of their pancakes.
