How I Used Our Pumpkins To Make A Curry.

Today we made Pumpkin Curry, I say we, what I actually mean is I made the curry. Dakota helped by taking the foil off the OXO cubes, well some of them.
The day started wonderfully at 2.30am, so like the good parent I am, I ensured at least one of us got some sleep and took her in the iPad, so who knows if she went back to sleep or not, what I do know is that she is asleep now whilst I am writing this.
We got to school on time, which we normally do but sometimes can be a bit touch and go. After dropping Jacob, my seven year old son, off at school, me and my two year old daughter Dakota, headed off to Boogie Bunnies. We (I mean me really) were a little bit excited as it was Halloween special mwhahaha.
Obviously as I am super mum I had got Dakota a Halloween costumn.......okay okay maybe not. Making the decision to dress her up this morning I quickly rummaged through the fancy dress outfits and found a pirate costume which had been Jacob's. Luckily for me she was keen to be a pirate today.
I went to put some make up on her to spook her up a bit, and had the classic 'no, I do it, I do it', as it's Halloween, I thought carry on love, you do it. It actually wasn't a bad effort.

We returned from our morning activities, made some lunch, put a film, then I got started on the curry.

The curry was a hit with everyone (except my partner who refused to eat it as he doesn’t like pumpkin).
The only problem with the recipe is that I couldn't see how many servings it made. As I don’t like wastage (hence making the pumpkin curry in the first place) I thought rather that use a quarter of a cauliflower and broccoli why not use the whole one and use that ratio to multiply the recipe.

As you can see I look like I am cooking for the village, not the eight adults that came over for walking dead night. I am going to let the kids try it tomorrow as it wasn’t too spicy.

The recipe advises serving with rice and naan bread, I served ours with just naan bread, taking this into account, I think the recipe might be for four servings.
